ALMOST Arroz Ala Cubana


For some reasons, I can't call this dish Arroz Ala Cubana.
First, there's no sunny-side up egg or fried saba on the side.
Second, I omitted a whole lot of other ingredients such as carrots, raisins, green peas and other seasonings.
So, I just have to name it ALMOST Arroz Ala Cubana --- LOL! sounds like it didn't make it somewhere =)

This dish is M's favorite.
At our high school cafeteria, they would sell it as Carioca.
But as far as I remember, the only Carioca I know is the fried sweet rice balls sold alongside bananaQ's.
Some would still call it that, so whatever the REAL name of this dish is then so be it.
Anyway, M and I would always have this for lunch back then.
I'd sprinkle a little soy sauce and hot sauce then I'm good to go. =)

My ALMOST Arroz Ala Cubana
(This proportion would serve about 4-8 persons --- depends on how big your appetite is! =))

Ingredients:
1/2kg of lean ground pork
3-4pcs medium-sized potatoes, diced
2pcs red bell peppers, diced
2pcs small onions, diced
1T of garlic, diced
salt and pepper
2T soy sauce/liquid seasoning
oil or butter (for sauteeing)
The other ingredients that you may add to make it THE Arroz Ala Cubana are: carrots, green peas, fried sunny-side up egg and fried saba; Some also add some tomato sauce and diced tomatoes)

How I did it:
I sauteed the onions and garlic until caramelized.
Bell peppers are added in.
I added the pork (skimmed of the fat in the process; you may also let the pork cook in its own oil and set it aside until you are ready to cook the almost arroz...) then the potatoes.
Once the potatoes are translucent, I put dashes of salt and pepper and the seasoning.
You may adjust the taste according to your preference.
Serve it over steamed rice and enjoy!

Cooking this took me no longer than 30minutes.
It is a perfect food to cook as I wanted to serve something that will make M full after a hard day's
work.
I've been sick the past few days so my taste buds aren't in its proper senses --- hence, either bland or highly seasoned food.
The preparation is also very simple so it's a go-to recipe when I'm running out of creative ideas. =)
