Prawn and Mango Sticks

This is the second of the pica-pica series I mentioned in my previous entry - Ham and Cheese Rolls.

My family loves seafood (well, except for M haha!) so I expected these skewers to be consumed before the others. And I knew too well. =)

The mangoes gave a fresh taste and the lemon dressing the right acidity. These skewers are perfect for the summer season! =)

Prawn and Mango Sticks

Ingredients:
30pcs medium to large prawns, cleaned and shelled but leave the tail intact
salt and ground black pepper
2-3 ripe mangoes, cut into cubes
2 garlic cloves, grated
2tbsp ginger, grated
3pcs lemons, juiced
1/8tsp chili sauce (optional)
2tbsp chopped herbs (basil, parsley, coriander - all or any one of the ff)
bamboo skewers

How I did it:
I first mixed the garlic, ginger, lemon juice, chili sauce and chopped herbs in a bowl.
(You may add an extra dash of salt+pepper if you want)
I then pan-fried the prawns and sprinkled it with salt and pepper to season.
The prawns are then threaded in the skewer, then the mango cubes.
I drizzled the lemon dressing over the skewers then it's good to go.

Note: You might be wondering where the herbs are in the pictures...I took the photo early on, before I sprinkled the dressing that's why. =)
