Ginataang Kalabasa at Malunggay
My mom had the vacant lot next to their house cleaned. Each month when she does, we receive a bag full of malunggay (Moringa oleifera) leaves harvested from that lot. This month, my lola also included a slice of local kalabasa (squash) and bunga ng malunggay (young malunggay seed pods) in our loot bag. =) I've been wondering what to do with them and the first thing that came to my mind was cooking them in coconut milk. :: :: :: Ginataang Kalabasa at Malunggay (Squash and Malunggay in Coconut Milk) Ingredients: (I'm giving rough quantity estimates) 1/4kg shrimps, peeled and deveined 1 1/2cups squash, cut into serving pieces 3cups malunggay leaves 1 1/2cups bunga ng malunggay 1pc onion, minced 4cloves garlic, minced 2cups coconut milk 2pcs siling haba (lady-finger) patis (fish sauce) to taste How I did it: In a pan, I sauteed the onion and garlic then added the shrimp.
