Minatamis na Saba (Sweetened Saba Bananas)

I tried experimenting with Minatamis na Saba - slightly improving the gooey texture it renders when it's kept for sometime in the fridge. This version may come off a bit too sweet at first, but once you chew on the saba, the acidity of the lemon will balance it out.

Turon (Saba Banana Spring Rolls)

Our summers are never complete without banana-Q's, halo-halo and turon . My FIL would send us freshly harvested saba bananas to take home from their place. I'd make a variety of snacks and dishes from the hands of bananas we have and so far, turon is the family's summer favorite this year. Turon (Saba Banana Spring Rolls) Ingredients: Saba bananas, peeled (halved lengthwise if it's too thick) Lumpia wrappers Brown sugar Jackfruit slices/slivers (Langka) or Cheese slices *optional Cinnamon powder *optional water for sealing the wrapper edges How to do it: Roll the bananas into the brown sugar. Sprinkle with cinnamon powder generously then with a slice of jackfruit (or cheese), cover with the lumpia wrapper. Seal the edges with water. Deep-fry over medium to high heat until the wrapper is golden brown and crispy. You may serve it with ice cream like what I usually do! =D :: :: :: Like this post? Prawn and Mango Sticks

This is the second of the pica-pica series I mentioned in my previous entry - Ham and Cheese Rolls . My family loves seafood (well, except for M haha!) so I expected these skewers to be consumed before the others. And I knew too well. =) The mangoes gave a fresh taste and the lemon dressing the right acidity. These skewers are perfect for the summer season! =) :: :: :: Prawn and Mango Sticks Ingredients: 30pcs medium to large prawns, cleaned and shelled but leave the tail intact salt and ground black pepper 2-3 ripe mangoes, cut into cubes 2 garlic cloves, grated 2tbsp ginger, grated 3pcs lemons, juiced 1/8tsp chili sauce (optional) 2tbsp chopped herbs (basil, parsley, coriander - all or any one of the ff) bamboo skewers How I did it: I first mixed the garlic, ginger, lemon juice, chili sauce and chopped herbs in a bowl.
