Minatamis na Saba (Sweetened Saba Bananas)

I tried experimenting with Minatamis na Saba - slightly improving the gooey texture it renders when it's kept for sometime in the fridge. This version may come off a bit too sweet at first, but once you chew on the saba, the acidity of the lemon will balance it out.

Pinwheel Cookies

When kids arrive home from school what do you usually give them?  Sometimes, I worry that if I give W a heavy snack, he might skip dinner and feel hungry late in the evening.  Also, there are times when I am too busy attending to other things that I don't have the time to whip up some freshly cooked pancakes or even pasta for merienda. photo from my old blog =) will post a more recent pic soon.

Turon (Saba Banana Spring Rolls)

Our summers are never complete without banana-Q's, halo-halo and turon . My FIL would send us freshly harvested saba bananas to take home from their place. I'd make a variety of snacks and dishes from the hands of bananas we have and so far, turon is the family's summer favorite this year. Turon (Saba Banana Spring Rolls) Ingredients: Saba bananas, peeled (halved lengthwise if it's too thick) Lumpia wrappers Brown sugar Jackfruit slices/slivers (Langka) or Cheese slices *optional Cinnamon powder *optional water for sealing the wrapper edges How to do it: Roll the bananas into the brown sugar. Sprinkle with cinnamon powder generously then with a slice of jackfruit (or cheese), cover with the lumpia wrapper. Seal the edges with water. Deep-fry over medium to high heat until the wrapper is golden brown and crispy. You may serve it with ice cream like what I usually do! =D :: :: :: Like this post? Champorado (Chocolate Rice Porridge)

Filipinos eat just about anything with rice.  Mikey Bustos even says, we're " Rice-ivores " and " We're Pinoy this way. "  Champorado is like a Pinoy rice version of a "snack" much like ' suman '. I love Champorado especially when it's milky and paired with ' tuyo '. It's perfect for cold and rainy mornings. :: :: :: Champorado (Chocolate Rice Porridge) Ingredients: a cup of sticky rice/glutinous rice ( malagkit-haba  is better than bilog for champorado) 3cups water 5T cocoa powder (or 1-2pcs of tablea ) 1/2cup sugar  milk - evaporated/condensed/fresh/powdered How to do it: Wash the sticky rice as you would in a regular rice, then drain. Add the water, then the cocoa powder. Bring to a boil while stirring to avoid lumps. Add the sugar. Stir once in a while and simmer until rice is cooked. Strawberry-Filled Mochi Balls

I am still not over my Mochi cravings ! Ice cream filled mochi's calling me even while sleeping. So while I am still unable to have a taste of Mochiko (a brand of ice cream filled mochi) I am just making myself something with mochi. I read in Yummy Magazine of a choco-berry filled mochi balls before but I can't seem to find the recipe now so I just recalled to mind what was in that recipe. Here goes: :: :: :: Strawberry-Filled Mochi Balls Ingredients: Filling: teaspoonfuls of strawberry jam (I have a jar in my fridge yay!) For the mochi: 2/3cup water 1/4cup sugar 1cup glutinous rice flour a drop (or two) of food color flour for dusting How I did it: I rolled six teaspoonful strawberry jam into six balls. I placed it on a sealed container and put it in the freezer while making the mochi. To make the mochi, I combiner the water, sugar, food color and glutinous rice flour in a bowl and cooked it in the microwave oven for 2 minutes. I mixed every 30 seconds or so. I...

Chocolate Cupcakes

It's such an amazing feeling seeing your son happy - almost teary eyed and jumping for joy. I saw him like that when he saw the prepped cupcakes ready to be transferred to the cupcake stand before the party. I promised him I'll make him chocolate cupcakes on their joint graduation party (with his cousin). See, it's been an issue for me whether to give him any material reward for him being in the honor roll. There's an ongoing debate on my head whether a stick-and-carrot approach on his studies will work - but my instincts say it won't.  So I told him I'll make him cupcakes because he's been a very good son - and not specifically for his graduating with honors. I felt giving him any material reward might overshadow the " real reward " which is " graduating with honors " because he studied diligently.  Anyway, I know that these cupcakes made him feel really good. Chewy Oatmeal Cookies

The same day I baked the Chewy Chocolate Chip Cookies for W, I also made some Oatmeal Cookies for myself. Funny, how most people I know can't stand the taste and texture of oatmeal - but which I actually enjoy. I still have a jar full of instant oatmeal so I've decided to bake a full batch as well. I also ran out of raisins (and got lazy to go to the corner store to buy some) so I just added some chopped walnuts. Though the chocolate chip cookies got wiped out first, these chewy oatmeal cookies are just as good! W's been bugging me to buy him a big pack of Chips Ahoy each time we go to the grocery. I could have easily gave in, except that M would give me a look - "stick to your list and the budget." And so I told W that instead of me buying him branded chocolate chip cookies, I'll just make him some. He loved the idea and everyday since then, he'd eagerly remind me to make him some during the weekend. :: :: :: Chewy Chocolate Chip Cookies Ingredients: 1/2cup granulated white sugar 1cup packed brown sugar 1cup softened butter or margarine 2pcs eggs 2tsp vanilla extract 1/2tsp baking soda 1tsp salt 2 1/2cups all-purpose flour 2cups chocolate chips (semi-sweet or milk chocolate morsels) How I did it: I pre-heated the oven to 350degF. Banana Raisin Bread

Finally! I found a way to feed my son bananas! *I am jumping for joy!* Those who may personally know me and my son W, may have heard about the story of how my son acts before the very sight of fruits. Let’s just say, in a psych-manner that he is Fruit-phobic --- Banana-phobic to be exact. Until now, I cannot understand how one person can’t stand the smell and taste of fruits --- even the most popular ones like banana, mango and apples --- and that at the very sight of it he’ll start feeling sick and vomits. My son won’t even touch the fruits. *sobs* I know for sure that I loaded myself with fruits and vegetables while I was pregnant with W. I'd buy fresh fruits from the Sunday market in Long Beach and pre-cut assorted fruits from Albertsons and Costco way back when I was in the US. Like they say, babies eat what their mothers eat while they’re still in the womb --- so I feel W should enjoy fruits just the way he did back when he’s still in my tummy. Cheesy Ensaymada and Cheese Rolls

What do you do on weekends when your whole family is together? For M, W and I --- we catch up on sleep! haha! But when we're awake, we find time catching up on each others' stories about the week that has been. We also bond over food, no matter how tight our budget is on a certain week and no matter how picky they are in the food they eat. Despite of how high bread and baking ingredients costs have become, I've decided to prepare some ensaymada and cheese breads for this weekend. We're heading south this Saturday and I thought that instead of a McDo drive-thru (which usually costs us not less than Php300) I'll pack this bread along with some juice or coffee on our take-away tumblers. I must say that it is really a transition for me living on our own now, as I have lived all my life with my parents who are very generous especially with food -- and now I have to stick to a certain budget every week for us to make both ends meet. Red Velvet Cupcakes

It has been a habit for me to surf channels upon turning on the tv before I finally settle with one show. Just weeks ago, I chanced upon a tv plug of "Chuck's Day-Off" - a show by Chuck Hughes being aired at the Asian Food Channel(AFC). There was a moment during the plug where Chuck was placing a dollop of cream over red luscious cupcakes --- that gave me this lightbulb moment. =) While AFC posts the recipes featured in all their shows in their website , (to which I managed to find Chuck's recipe for "THE CUPCAKE" I was craving for) I still used the power of Google and found alternate versions.
