Onion Soup
Soup for the cold weather!
I'm actually feeling tired (and still dizzy because of my low blood pressure) so I just made this super easy soup for me and my son. It's surprisingly refreshing!
Light Onion Soup
Ingredients:
1T extra virgin olive oil (light)
1/4kg onions, sliced the way you want it (minced, chopped, etc)
1L beef stock (or 3 cups of water plus 1 beef bouillion cube)
salt and pepper to taste
lemon juice *optional
mint leaves *optional
How to do it:
Heat the olive oil in a pot and saute the onions until translucent.
Add the beef stock and bring it to a boil.
Season with salt and pepper and simmer for an additional 2minutes.
Serve hot with lemon juice and mint leaves (which you can sprinkle over your soup).
Enjoy! =)
