Corned Beef Hash Frittata
A frittata is different from an omelette. Yes.
Frittatas are prepared and cooked with the meat/veggies "add-ons" incorporated in the beaten egg mixture already. An omelette on the other hand has the "add-ons" placed on the egg when it's almost cooked, then folded. It's mainly on the way the additional ingredients are added to the egg. =)
Hence, I'll stop calling this an omelette. Teeheehee. =D
Corned Beef Hash Frittata
Ingredients:
1 big can corned beef
2 medium potatoes, cut into small cubes
1 onion, minced (you may also add garlic and tomato if you want)
3-4pcs eggs, beaten and seasoned with salt and pepper
salt and pepper
How to do it:
Using a non-stick pan, saute the onions. Add the corned beef and stir-fry.
Add the potatoes and cook until translucent.
Scoop out everything from the pan and add to the beaten eggs in a bowl.
Mix everything up quick then pour it to the pan.
Spread the mixture evenly around the pan then cook for 3-4 minutes until the edges are slightly browned and firm.
*I divided the mixture into 3 small portions that's why the frittata in the picture looks thin. =)*
