Cabbage and Meatballs Soup

House chores leaves a person me all stressed-out. Well, just sometimes.
Funny how dust particles never seem to get tired landing on the appliances, on the table, and on the floor.
We've been living without a helper for a couple of years now and hence, I am a full-time and all-around home manager.

When the chores keep my hands tied, I use some of my stock 30-minute (or less) meals recipes ala Rachael Ray to be able to feed my 6 year old son and a picky eater husband.

Cabbage and Meatballs Soup (I got this recipe from a Knorr Pork Cube Package)

Ingredients:
Meatballs:
1/4kg ground pork
1/2cup singkamas finely chopped
2cloves garlic finely chopped
1pc small onion finely chopped
1pc raw egg
dash of salt
Soup:
1tbsp cooking oil
3cloves garlic, finely chopped
1pc small onion, coarsely chopped
4cups water
2pcs Pork Broth Cubes
1/2cup repolyo sliced thinly
*1/2cup carrots sliced thinly (optional)
*1/2cup sayote sliced thinly (optional)
ground black pepper

How I did it:
I combined all the ingredients for the meatballs and formed it into 1inch diameter balls.
I then set it aside.
In a pan, I sauteed the onion and garlic.
I added the water and pork broth cubes then let it simmer.
When the broth is almost boiling, I dropped the formed meatballs one at a time and let it simmer again until meatballs are cooked.
I put out the heat when the added vegetables are cooked through.

Sometimes, I make a variation by adding some misua. I just add a little more water because the noodles absorb much of the broth.

I love it that W loves this dish also. This is a one-pot dish that is very healthy and delicious. =)

Xoxo,
