Pork Menudo

I was so into doing Menudo and I am excited to blog about it while preparing and cooking it.
But you know what?
I was not able to take a picture of the finished product because we were so hungry that lunch.
Too late when I remembered. hahaha! =)

Anyway, I still have a picture of the ingredients I used so for now, you'll have to do with it. =)

Pork Menudo

1/2 kilo pork (cut into small chunks)
6pcs hotdogs (cut in small pieces)
4 potatoes (cut in small cubes)
1 carrot (cut in small cubes)
1 green and 1 red bell pepper (diced)
1 cup green peas
1/4 cup raisins
3 tomatoes (diced)
1 small head of garlic (minced)
1 medium size onion (diced)
1 small can of liver spread
3packs of tomato sauce (see picture)
3pcs bay leaves
salt and black ground pepper to season
a dash of cayenne pepper
3T soy sauce

How I did it:
I sauteed the onion, garlic and tomatoes. I added the pork cubes and hotdogs. When cooked through, I added the potatoes, carrots, green peas then raisins. The liver spread, bay leaves and bell peppers were added next. I placed a dash of salt, ground black pepper and cayenned pepper to season, before adding the tomato sauce and soy sauce. Simmer for about 15minutes more before putting off the heat.
Best served with steamed rice.

*You may adjust the thickness/consistency of the sauce by adding water or reducing the amount of tomato sauce. Tomato paste may also be used.

Next time I make menudo, I'll make sure I get to take a picture of the finished product! =)
